Gluten-free alternative to breakfast!

With fork (or in the blender) mix 1 banana with 2 eggs. Fry as you would pancakes.


Makes 10 small pancakes (about 2 1/2 inches in diameter). Serves two.


Top with butter and your favorite syrup.


They are absolutely divine and have no flour! This healthy treat satisfies my craving for something a bit sweet at breakfast time (since I have given up wheat in my diet).
